Last night I made some Mint / Red Onion Beefburgers, they were delicious! Suitable for PP / P&V days.
700g lean minced beef
2 eggs
salt and pepper
good handful of fresh chopped mint
2 small red onions finely chopped
Mix all ingredients together, form into burgers - I made 7 large burgers. Preheat oven to 200C. Takes about 20-25 minutes to cook.
They could also be made into meatballs and served with tomato sauce / courgette ribbons (pasta alternative) on P&V days.
